Green Breakfast! Saint Patrick’s Day Idea

Well, Saint Patty’s Day is coming up, and let’s be honest, I don’t decorate for it.  Although I considered digging up some of the clover currently taking over my yard and bringing it indoors to be all festive… (my grass has no chance this year, the winter has been so mild that the weeds have been multiplying ALL over the place, while the grass took a long winter’s nap!)

I’ve been collecting cute ideas on Pinterest… you know what, my “Pinterest house” would be so festive and cheery all year round… but this is reality.

Soooo, what I did decide I could do is make an all green breakfast.  May not sound to appetizing, and I will admit I over cooked the eggs, but it was REALLY good!  Also, I thought a healthy breakfast might be a nice choice over all the candy ridden holidays.

Here was the inspiration for the whole meal, this is from Aprons Strings, and while she called it flower power, all I could see was a a genius idea for St Patrick’s day (and it is super delicious!)

Pretty easy to get started, but I had to think of some other green ideas first.  And when I saw this green monster smoothie from Skinny Taste, I knew that would be on the menu.  And people, who know that drinking a cup of pureed spinach could be good, but I am telling you this was amazing (I also tried the peanut butter version, but didn’t like it at all… so try this one first)

I steamed them a little cuz I can’t stand the white to be not cooked…

and then I cooked them a little too long!

For the green smoothie, I thought it would be fun to have a little shamrock straw.  Just take a small 2-3 inch piece of paper and fold it in half then half again, and cut like a heart. then score the center with and x and stick the straw through.

Green Monster Smoothie (adapted slightly from Skinny taste)

Ingredients:

3/4 cup light coconut milk

6 oz fat free yogurt

3/4 cup frozen pineapple, cubed

1 ripe medium banana

1 cup spinach

2 tbsp sweetened shredded coconut

1 1/4 cups ice

Directions:
Add all ingredients to blender and blend until smooth. Makes about 3 1/2 cups.

Instead of toast, I thought these green quesadilla’s would be good, they were nice and soft even with their 11 grams of fiber each!

Add some sliced kiwi, and you’re set:

Now, you probably don’t have to do this much, but it was definitely fun!

  1. This is adorable!! My kids are celebrating in their preschool on Thursday….and maybe I’ll do this then to get them in the mood! They don’t understand dates yet…so that’s fine, right? 🙂
