We love any recipe that allows us to easily sneak some veggies into our dinner menu. And this red cabbage coleslaw certainly fits the bill when it comes to fast and easy side dishes. If you have the right tools, you can whip this coleslaw salad together in 10 minutes or less!
The key to this red cabbage coleslaw is having a Mandoline slicer. If you don’t have this handy kitchen tool, we highly recommend logging onto Amazon.com right now and ordering one. We recommend the Mueller Austria V-Pro 5 Blade Adjustable Mandoline Slicer, HomeNative Adjustable Mandoline Slicer, or KitchenAid Gourmet Mandoline Slicer.
Once you’ve got your Mandoline, you’re ready to make this super easy (and fast) coleslaw recipe. Start by using your slicer to cut your cabbage into a fine, coleslaw consistency. Next, add all of the dressing ingredients to a medium-sized bowl and mix together with a whisk.
To finish the coleslaw, add the cabbage to the dressing mixture and toss. Serve this yummy cabbage salad right away or pop it in the fridge until you’re ready to eat. Either way it’s sure to be a crowd-pleaser. We suggest serving it alongside fried chicken or baked fish.
