Roasted Stuffed Apples with Cinnamon Meringue

I’m actually loving this dessert way more than any other dessert we may have around here. Actually, I have made it an obscene number of times over the past couple of weeks and I don’t even feel guilty about it.
The thing about these roasted stuffed apples is that they started as an experiment, a crazy experiment actually, when I found myself with a huge load of apples and not wanting to make a pie crust or go through the whole pie making thing that can take so much time (seriously, why does it takes so much?).
I also was feeling extra lazy on the dish washing department and oh did I mentioned the fact that I also wanted something extra delicious? That’s when creativity met cravings and after carving a bit, playing with fillings, and letting it slowly roast in the oven for a couple of minutes, these roasted stuffed apples came to life.
And oh my gosh they were SO GOOD! Like literally, these roasted stuffed apples are addictive, and they are really versatile and really fun to play with, you can pretty much stuff them with whatever you want and call it a day. For example, I roasted everything and then added on top some chopped strawberries to add more color and a burst of flavor but you could add caramel or peanut butter or even peppermint and chocolate. the sky is the limit.
Oh and also make the cinnamon meringue, it’s so easy and the little bit of work it takes is totally worth it. It’s creamy, spicy, and warm and just goes great with all the roasted deliciousness of the apples. And hey, you don’t have to wash any dishes after serving them, so you can totally add an extra meringue making step right?
Roasted Stuffed Apples
Ingredients
- 6 Red apples
- 1 Banana
- 8 Strawberries
- 2 Tbsps maple syrup
- 2 Tbsps sliced almonds
- ¼ Cup sugar
- For the cinnamon meringue
- 1 Cup powdered sugar
- ¼ Cup water
- 1 Tbsp cinnamon
- ½ Tsp vanilla extract
Instructions
- Preheat oven to 350F.
- Slice the banana and strawberries.
- Wash the apples and cut the top.
- Carefully core the apples.
- Mix the inside of the apple with the strawberries, banana coins, sugar, maple syrup and sliced almonds.
- Fill the apples with the mixture and take to the oven.
- Bake them for 15 minutes, or until tender.
- While baking, mix the cinnamon meringue ingredients and use a piping bag to place on top of the baked apples.
- Serve and enjoy.
